Pasta
Starting with the best, local ingredients, we make our pasta in small batches. extruding each shape through bronze dies to create a rough texture that clings to your sauce.
The pasta is then placed in an Italian drying oven where moisture slowly evaporates. The result is high quality, slow-dried pasta which retains its al dente character when you cook it.
We use Shepherd’s Grain Un-enriched semolina for our conventional pasta. Shepherd’s Grain is a co-operative of “Food Alliance” certified family growers following best farming practices, protecting the land with no-till, direct seed farming methods.
